Ingredients/Components
- sugar - 2 c
- cinnamon - 1/2 tsp
- cream cheese
- eggs - 4 item
- vanilla - 1 tsp
- oil - 1 c
- grated carrots - 2 c
- baking soda
- powdered sugar - 1 pkg
- self-rising flour
- pecans, chopped - 1 c
- Slowly add dry ingredients which have been sifted together
How to make carrot cake:
Mix sugar, oil, eggs and vanilla. Slowly add dry ingredients which have been sifted together. Fold in carrots. Bake in three layers at 350° for 20 to 25 minutes. Let cool and frost with Cream Cheese Icing.Cream Cheese Icing:1 stick butter or margarine1 tsp. vanilla1 pkg. powdered sugar1 c. pecans, chopped1 large pkg. cream cheese Beat butter and cream cheese together.
