Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- vanilla - 2 tsp
- salt - 1/2 tsp
- flour - 3 c
- coconut - 1/2 c
- grated carrots - 2 c
- confectioners sugar - 1 item
- baking soda - 2 tsp
- cooking oil
- softened butter or margarine - 2 Tbsp
- eggs, slightly beaten - 3 item
- Add remaining ingredients
- pecans, broken or chopped
- unsweetened crushed pineapple including juice - 8 oz
- unsweetened crushed pineapple, well drained - 3 Tbsp
How to make carrot cake:
Sift all dry ingredients together. Add remaining ingredients. Bake in greased and floured tube pan in 350° oven for 1 hour and 10 minutes or more until done (test with toothpick). Cool and remove from pan.Carrot Cake Frosting:2 oz. softened cream cheese2 Tbsp. softened butter or margarine3 Tbsp. unsweetened crushed pineapple, well drained confectioners sugar Cream butter or margarine with cream cheese until smooth.
