Ingredients/Components
- sugar - 1 Tbsp
- semi-sweet chocolate - 2 oz
- vanilla - 1 tsp
- salt - 1/8 tsp
- butter - 1 Tbsp
- powdered sugar - 1/4 c
- whipping cream - 1/2 c
- Ricotta cheese - 1/2 lb
- sherry - 5 tsp
- finely chopped citron - 1 Tbsp
- cannoli shells - 12 item
- Fold in coarsely chopped chocolate and citron
How to make cannoli:
Combine Ricotta cheese, whipping cream, powdered sugar and vanilla in blender until mixture is quite thick. Fold in coarsely chopped chocolate and citron. Stuff into cannoli shells shortly before serving. Sprinkle with powdered sugar and decorate with half a candied cherry at either end, if desired. Baking sheets with little or no sides will let your cookies bake evenly and quickly. The sheets should be shiny and clear the sides of the oven at least 2 inches for best circulation of heat and even baking.

Cool baking sheets before placing unbaked cookies on them or the heat will melt the shortening in the dough, causing cookies to spread too much during baking.

If crisp cookies soften in storage, place them in a 300° oven about 5 minutes.

Keep soft cookies soft by placing a slice of bread in the container.
