  • sugar - 3/4 c
  • vanilla - 1 tsp
  • milk - 2 c
  • salt - 1/4 tsp
  • butter - 2 Tbsp
  • cornstarch - 1/4 c
  • egg yolks - 3 item
  • coconut - 1 c
  • powdered sugar - 1/4 c
  • whipping cream - 1 c
  • 9-inch pie shell - 1 item
  • toasted coconut for garnish - 1 item

How to make coconut cream pie:

Combine first 3 ingredients in a heavy saucepan. Gradually stir in milk. Cook over medium heat, stirring constantly, for 30 seconds. Remove from heat; stir in butter, vanilla and 1 cup coconut. Pour in pie shell. Mix whipping cream and powdered sugar until fluffy. Cover pie and refrigerate. Garnish with toasted coconut.
