Candied sweet potatoes
Ingredients/Components
- sugar - 2 c
- sweet potatoes - 1 lb
- water or orange juice - 1/2 c
- to 3 sticks margarine or butter or equivalent low-fat substitute - 2 item
How to make candied sweet potatoes:
Slice peeled potatoes very thin. Melt butter or margarine in electric frypan. Add 1 cup sugar. Layer in the potatoes. Sprinkle with the other cup sugar and 1/2 cup liquid. Simmer, covered, until the potatoes are done and syrup turns slightly thick. Do not stir but shake pan often. Watch for scorching. Add more liquid if necessary.
