Cajun jambalaya
Ingredients/Components
- salt
- pepper - 1/2 tsp
- chopped onion - 4 c
- minced garlic - 1 Tbsp
- bay leaves - 2 item
- cayenne pepper - 1/4 tsp
- white rice
- chopped bell peppers - 3 item
- water or stock
- to 6 chicken thighs - 5 item
- cubed, smoked ham - 1/2 c
- chopped red or yellow pepper - 1 item
- Andouille sausage
How to make cajun jambalaya:
Brown sausage in large, deep pot. Remove and add chicken. Cook chicken until done. Remove. Throw in vegetables and ham and cook until tender. Add spices. Add sausage and debone chicken. Stir thoroughly. Add water to cover. Bring to boil; turn down and cover. Cook about 20 minutes until rice is done. Stir occasionally to avoid sticking. Serve with salad and garlic bread.
