  • sugar - 1 c
  • salt - 1/4 tsp
  • baking powder
  • all-purpose flour
  • egg substitute - 1 or
  • flavoring - 1 tsp
  • shortening, softened - 1/3 c
  • milk not cold - 2/3 c

How to make busy day cake:

Makes 2 round layers (1-inch thick) or an 8-inch square cake (1 1/2-inches thick). Bake 25 to 30 minutes in 350° oven.

Sift dry ingredients together. Measure shortening in cup with milk. Add together with egg and flavoring. Beat well 2 minutes. Bake.

This cake can be varied.

First, Spice: Sift 1 teaspoon cinnamon, 1/2 teaspoon nutmeg and 1/4 teaspoon cloves with flour.

Chocolate: Add 2 squares unsweetened chocolate or sift 6 tablespoons cocoa with flour and 1 extra tablespoon shortening.

Mash 2 ripe bananas and add with milk. (Makes a heavy cake.)

Bake 20 minutes in cupcake pans. Makes 1 dozen.
