Ingredients/Components

  • milk - 1 qt
  • butter or margarine - 1/2 c
  • flour - 1/2 c
  • eggs, beaten - 16 item
  • salt and pepper - 1 item
  • onion, chopped - 1 item
  • can evaporated milk - 1 oz
  • green pepper, chopped - 1 item
  • cheese, grated - 1/2 c
  • ham, cubed - 1/2 lb
  • slices bacon, fried - 4 item
  • to 2 small cans mushrooms - 1 item

How to make brunch casserole:

Saute bacon and drain. Add butter to pan and saute peppers, onions, ham and mushrooms. Add flour, salt and pepper to taste. While mixing, gradually add 1 quart of milk until thickened and smooth. Set aside. Scramble eggs, milk (evaporated) and cheese; salt to taste. Alternate layers: 2 of sauce, 2 of eggs. Bake 1 hour at 300°. This can be made a day ahead and cooked when needed. Delicious for a brunch.

Makes 9 x 13-inch pan completely full. Serves 8 to 12. May be halved. I have brought this for Bosses' Day the last two years.
