  • sugar
  • eggs - 4 item
  • milk - 2 c
  • vanilla extract - 2 tsp
  • butter or margarine - 3/4 c
  • salt - 1 tsp
  • flour - 5 c
  • baking powder - 2 Tbsp
  • walnuts, chopped
  • fresh or frozen blueberries * - 3 c

How to make blueberry quick bread:

*If frozen blueberries, do not thaw.

Preheat oven to 350°. Grease and flour 10-inch Bundt pan or two 9 x 5-inch loaf pans. In large bowl, mix flour, sugar, baking powder and salt. Cut in butter to resemble fine crumbs. Stir in walnuts.

In small bowl, beat eggs slightly with fork; stir in milk and vanilla; add to flour mixture. Gently stir in blueberries; spoon batter into pan.

Bake 1 hour and 20 minutes until toothpick inserted in center comes out clean. Cool in pan on rack 10 minutes. Remove from pan. Serve warm or cold. Refrigerate leftover bread.
