Blueberry quick bread
Ingredients/Components
- sugar - 3/4 c
- eggs - 2 item
- vanilla - 1 tsp
- milk - 1 c
- butter or margarine - 6 Tbsp
- salt - 1/2 tsp
- baking powder - 1 Tbsp
- all-purpose flour
- walnuts, chopped - 3/4 c
- blueberries
How to make blueberry quick bread:
In large bowl, with fork, mix flour, sugar, baking powder and salt. With pastry blender, cut in butter or margarine until mixture resembles fine crumbs. Stir in walnuts.In small bowl, with fork, beat eggs slightly. Stir in vanilla and milk. Stir egg mixture into flour mixture just until flour is moistened. Gently stir blueberries into batter. Spoon evenly in a greased and floured loaf pan, 9 x 5-inches. Bake one hour and 20 minutes at 350°. Makes one loaf.
