Blueberry quick bread



Ingredients/Components
- sugar
- vanilla - 2 tsp
- milk - 2 c
- salt - 1/2 tsp
- baking powder - 2 Tbsp
- all-purpose flour - 5 c
- large eggs - 4 item
- walnuts, chopped
- margarine, slightly softened - 3/4 c
- fresh or frozen blueberries if frozen, do not thaw - 2 c
How to make blueberry quick bread:
Preheat oven to 350°. Grease and flour 10-inch tube or Bundt pan.In a large bowl, mix the flour, sugar, baking powder and salt. With pastry blender or 2 knives, cut in margarine until mixture resembles fine crumbs. Add chopped walnuts. In a small bowl, beat eggs slightly. Add milk and vanilla and mix well, then stir in the flour, mixing until flour is moistened. Gently stir in blueberries. Spoon batter evenly into pan. Bake bread 1 hour or until toothpick comes out clean. Cool in pan on wire rack 10 minutes; remove from pan to finish cooling. Makes 24 servings.
