  • sugar
  • milk - 2 c
  • vanilla extract - 2 tsp
  • salt - 1/2 Tbsp
  • baking powder - 2 Tbsp
  • all-purpose flour - 5 c
  • large eggs - 4 item
  • walnuts, chopped
  • fresh or frozen blueberries - 2 c
  • margarine or butter 1 1/2 sticks - 3/4 c

How to make blueberry quick bread:

Preheat oven to 350°. Grease and flour a 10-inch Bundt pan. In a large bowl, mix flour, sugar, baking powder and salt. With pastry blender or 2 knives used scissor fashion, cut in margarine or butter until mixture resembles fine crumbs. Stir in chopped walnuts. In small bowl beat eggs slightly; beat in milk and vanilla until well mixed. Stir into flour mixture just until flour is moistened. Gently stir in blueberries; spoon batter evenly into Bundt pan.

Bake bread 1 hour and 20 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack (10 minutes). Remove from pan and finish cooling on wire rack.
