Ingredients/Components

  • butter, softened - 1/4 c
  • sugar - 1/4 c
  • cinnamon - 1/2 tsp
  • milk - 1/2 c
  • salt - 1/2 tsp
  • butter - 1/2 c
  • baking powder - 2 tsp
  • egg - 1 item
  • all-purpose flour - 1/3 c
  • sifted all-purpose flour - 2 c
  • blueberries - 2 c

How to make blueberry muffins:

Oil muffin tins. In a large bowl, cream together 1/2 cup of butter and 3/4 cup of sugar. Add the egg, beating well. In a separate bowl, combine 2 cups of flour, baking powder and salt. Add to the creamed mixture alternately with the milk. Fold in the blueberries. Fill the prepared muffin tins 2/3 full.

In a small bowl, combine 1/2 cup of sugar, 1/4 cup of butter, 1/3 cup of flour and the cinnamon until crumbly. Sprinkle the topping over the muffin batter. Bake at 400° for 20 to 25 minutes. Makes 1 dozen.
