Blueberry muffins
Ingredients/Components
- butter, softened - 1/4 c
- sugar - 1/4 c
- cinnamon - 1/2 tsp
- milk - 1/2 c
- salt - 1/2 tsp
- butter - 1/2 c
- baking powder - 2 tsp
- egg - 1 item
- all-purpose flour - 1/3 c
- sifted all-purpose flour - 2 c
- blueberries - 2 c
How to make blueberry muffins:
Oil muffin tins. In a large bowl, cream together 1/2 cup of butter and 3/4 cup of sugar. Add the egg, beating well. In a separate bowl, combine 2 cups of flour, baking powder and salt. Add to the creamed mixture alternately with the milk. Fold in the blueberries. Fill the prepared muffin tins 2/3 full.In a small bowl, combine 1/2 cup of sugar, 1/4 cup of butter, 1/3 cup of flour and the cinnamon until crumbly. Sprinkle the topping over the muffin batter. Bake at 400° for 20 to 25 minutes. Makes 1 dozen.
