Blueberry delight
Ingredients/Components
- sugar - 2 Tbsp
- pkg - 1 oz
- cornstarch - 2 Tbsp
- water - 1/4 c
- margarine or butter - 3/4 c
- sifted powdered sugar - 1 c
- self-rising flour - 1/2 c
- can crushed pineapple, drained - 1 oz
- fresh blueberries - 2 c
- carton frozen whipped topping, thawed and divided - 1 oz
- finely chopped pecans, divided - 1 c
How to make blueberry delight:
Step 1: Combine flour and 2 tablespoons sugar. Cut in butter with a pastry blender until mixture resembles coarse meal. Stir in 1/2 cup pecans. Press flour mixture into a 13 x 9 x 2-inch baking pan. Bake at 350° for 15 minutes. Let cool completely.Step 2: Combine blueberries and 1/4 cup sugar in small saucepan (combine cornstarch and water; add to blueberry mixture). Cook over low heat until thick, stirring constantly. Remove from heat. Add pineapple. Cool. Combine cream cheese and powdered sugar. Beat until fluffy. Stir in 3 cups whipped topping. Spread over crust and top with cool blueberry mixture. Spread remaining whipped topping over berries. Sprinkle on pecans. Refrigerate until ready to eat.
