Blueberry buttermilk muffins
Ingredients/Components
- salt - 1/4 tsp
- flour
- buttermilk - 1 c
- eggs, beaten - 2 item
- baking powder
- butter or margarine, melted - 1/2 c
- blueberries or a dry pack frozen blueberries
How to make blueberry buttermilk muffins:
In a small bowl, combine first 3 ingredients until blended. In a large bowl, combine all dry ingredients. Make a well in the center. Add buttermilk mixture, stirring until flour mixture is just moistened. Fold in blueberries. Spoon into greased muffin tins. Bake at 400° for 20 minutes or until tops are golden and muffins test done. Remove from pan and cool on wire rack. Makes 18 muffins.Recipe categories: Breads, Quick breads, Muffins.
