  • shortening - 2 Tbsp
  • medium onion - 1 item
  • salt to taste - 1 item
  • small onion - 1 item
  • black beans - 1 lb
  • or 3 garlic cloves - 2 item

How to make black bean soup:

Clean and wash the black beans. Cover beans and soak overnight. Use same water, medium onion (chopped finely) and salt to taste. Add garlic, if desired. Allow beans to boil until the liquid has thickened and has nearly boiled away. Put the beans through a food grinder. This will be a paste. Chop the small onion and fry in the shortening. Add paste with sufficient water to make desired thickness. Cook slowly for 10 to 15 minutes. Serve with croutons or fried tortilla strips.
