Ingredients/Components

  • garlic clove minced - 1 item
  • cooked black beans, rinsed and drained may use canned - 1 c
  • Tbsp each: sliced green onion; chopped bell pepper and chopped red onion - 2 item
  • each: lime juice and chopped cilantro - 1 Tbsp
  • flour tortillas 10 inch round - 4 item
  • grated Monterrey Jack, Asadero or Mozzarella cheese - 1 c

How to make black bean quesadillas:

Slightly mash black beans with a fork in small bowl. Stir in green onion, bell pepper, onion, lime juice, cilantro and garlic. Set aside.

In lightly greased (may use PAM) large skillet, over medium heat, cook 1 tortilla 15 seconds or until softened; turn over. Spread 1/4 c. bean mixture over half of tortilla; top with 1/4 c. cheese. Fold tortilla in half, over filling. Cook 2 minutes on each side or until cheese melts. Keep warm in 200° oven while remaining quesadillas are prepared. Cut each into 4 wedges to serve. Makes 16 appetizers.
