Texas caviar
Ingredients/Components
- salt - 1/2 tsp
- vegetable oil - 1/4 c
- clove garlic, minced - 1 item
- red wine vinegar - 1/3 c
- black pepper - 1/4 tsp
- finely chopped yellow onion - 1/4 c
- cooked or canned black-eyed peas, rinsed and well drained - 3 c
How to make texas caviar:
In a medium-size bowl, whisk the vinegar with the oil. Stir in the onion, jalapeno pepper, garlic, salt and black pepper until blended.Gently stir in the black-eyed peas and refrigerate, covered, for at least 2 hours. Real Texans recommend marinating the Caviar for 2 days to a week. Serve well chilled as an appetizer spread or a relish. Makes 3 1/2 c.
