Ingredients/Components

  • beaten egg - 1 item
  • chopped onion - 1/2 c
  • ground beef - 3/4 lb
  • shredded Cheddar cheese - 1/2 c
  • cottage cheese - 1 c
  • parsley - 2 Tbsp
  • Parmesan cheese, grated - 1/4 c
  • minced garlic - 1 tsp
  • manicotti shells - 8 pkg
  • can tomato herb sauce or spaghetti sauce - 1 oz

How to make beef and cheese manicotti:

Filling: In a 10-inch skillet, cook beef, onion and garlic until beef is browned. Drain off fat. Stir in cottage cheese, Parmesan cheese, eggs and parsley. Set aside.

Cook pasta in boiling, salted water until firm, yet tender, about 18 minutes. Drain and rinse with cold water. Drain well. Spoon about 1/3 cup of filling into each shell.

Arrange stuffed manicotti in a 12 x 8 x 2-inch baking dish. Pour tomato sauce over top. Cover with foil. Bake at 350° for about 35 minutes or until heated through. Sprinkle with Cheddar cheese. Garnish with parsley.
