Bean and cheese burritos
Ingredients/Components
- water - 2 Tbsp
- 5 oz
- chopped onion - 1 c
- salsa - 1/2 c
- can diced green chilies, drained - 1 oz
- lettuce, shredded - 3 c
- 6-inch flour tortillas - 8 item
- can no-fat refried beans - 1 item
How to make bean and cheese burritos:
To soften tortillas, stack and wrap in foil. Heat in a 350° oven for 10 minutes. Meanwhile in a medium saucepan, cook the onion in water until tender. Do not drain. Stir in the refried beans and green chilies; cook and stir until heated through. Spoon about 1/3 cup of the bean mixture onto each tortilla. Sprinkle about 3 tablespoons of the Monterey Jack cheese on top of the bean mixture; roll up tortilla. Place on a foil-lined baking sheet. Bake loosely covered in a 350° oven for about 10 minutes or until heated through.To serve, place 3/4 cup of the shredded lettuce on each plate and top with 2 burritos. Serve with salsa. Makes 4 servings.
