Baked stuffed sweet potatoes
Ingredients/Components
- salt and freshly ground black pepper to taste - 1 item
- large sweet potatoes, washed and pierced - 4 item
- stalks broccoli, stems peeled, flowers and stalks cut into small pieces - 2 item
- scallions, trimmed and finely chopped - 2 item
- grated part skim Mozzarella cheese - 1/2 c
How to make baked stuffed sweet potatoes:
Set oven to 375°. Bake the potatoes for 1 hour or until they are tender when pierced with a fork.Meanwhile, steam the broccoli over hot water for 3 minutes or until it is bright green but still has some bite. Drain it and rinse with cold water. Set aside.
Make a shallow cross in each potato, then pinch the sides to push up the flesh a little. Place the sweet potatoes in a baking dish large enough to hold them snugly. Divide the broccoli among the 4 potatoes. Sprinkle with the scallions and Mozzarella and season with salt and pepper. Bake the potatoes for 10 minutes more or until the cheese melts and bubbles. Serves 4.
