Baked chicken and mushrooms
Ingredients/Components
- or 3 chicken breasts, boned and skinned - 2 item
- eggs, well beaten - 2 item
- bread crumbs - 1 c
- butter, or oleo - 8 Tbsp
- mushrooms, sliced - 1/2 lb
- cheese, shredded - 4 oz
- chicken stock - 1 c
- juice of 1 lemon
How to make baked chicken and mushrooms:
Cut chicken into strips and marinate in egg mixture for one hour. Roll chicken in bread crumbs; brown lightly in butter. Transfer to 1 1/2 quart casserole. Slice mushrooms over chicken. Sprinkle cheese over mushrooms. Pour chicken stock over all. Bake at 350° for 30 minutes.
