Artichoke nibbles
Ingredients/Components
- eggs - 4 item
- salt - 1/4 tsp
- clove garlic, minced - 1 item
- bread crumbs - 1/2 c
- minced parsley - 2 Tbsp
- small chopped onion - 1 item
- sharp Cheddar cheese, shredded - 1/2 lb
- jars marinated artichoke hearts - 2 oz
- each: pepper, oregano and liquid hot pepper seasoning - 1/8 tsp
How to make artichoke nibbles:
Drain marinade from 1 jar of artichokes into frying pan; drain the other jar (save for other uses). Chop all the artichokes; set aside. Add onion and garlic to pan; saute until limp. Beat eggs in a bowl; add crumbs, salt, oregano and hot pepper. Stir in cheese, parsley, artichokes and onion mixture. Turn into a greased 7 x 11-inch baking pan; bake at 325° for about 30 minutes until set. Let cool in pan; cut into squares. Serve cold or heat in 325° oven for 10 to 12 minutes.
