- dried apricots add a little sugar to taste - 3/4 c
How to make apricot coconut balls:
Cook apricots in boiling water to cover just until tender (about 35 minutes). Drain and dice. Mix apricots, cheese and extract together. Mix in 1/2 cup coconut. Shape into small balls and roll in remaining crust. Chill. Makes 24 balls.Recipe categories: Desserts, Fruit, Coconut.
