Apricot chicken
Ingredients/Components
- chopped pecans - 2 Tbsp
- cornstarch - 1 Tbsp
- nutmeg - 1/4 tsp
- apricot brandy - 2 Tbsp
- onion, chopped - 1 item
- sliced mushrooms - 2 c
- noodles - 4 c
- each - 4 chicken
- low-sodium chicken broth - 1 c
- dried apricot halves, julienned - 12 item
How to make apricot chicken:
Spray pan with cooking spray and brown chicken for 2 minutes on each side; remove from skillet. Re-spray pan and cook mushrooms and onions until soft. Add apricot halves, chicken broth, nutmeg and chicken breasts and simmer 6-8 minutes. Mix cornstarch and brandy and add to mixture.
