Apricot chicken
Ingredients/Components
- salt - 1 tsp
- flour - 1/2 c
- margarine - 2 Tbsp
- Dijon mustard - 1 Tbsp
- olive oil - 2 Tbsp
- slivered almonds - 2 Tbsp
- apricot preserves - 1/2 c
- nonfat yogurt - 1/2 c
- skinned chicken breasts, halved - 4 item
How to make apricot chicken:
Preheat oven to 375°. Melt margarine with oil in baking pan. Shake chicken in a plastic bag with flour and salt until coated. Place chicken in single layer and bake for 25 minutes. Combine apricot preserves, mustard and yogurt. Spread apricot mixture on chicken and bake for 30 minutes more. Just before serving, brown almonds lightly in oven.
