Ingredients/Components
- margarine - 1 c
- eggs - 5 item
- flour
- salt - 1/2 tsp
- sugar - 2 Tbsp
- warm water - 2 Tbsp
- yeast - 1 pkg
- vanilla - 1 tsp
- lemon extract - 1 tsp
- raisins - 1 c
- slivered almonds - 1/2 c
- powdered sugar - 2 Tbsp
How to make raisin cake:
Beat margarine in bowl until light and fluffy. Add eggs, one at a time, beating well. Add flour, salt and sugar. Dissolve yeast in water. Stir into dough with vanilla and lemon extract. Stir in raisins. Butter a 10-inch tube pan. Sprinkle the bottom with almonds. Turn dough into pan and let rise to almost the top of the pan. Bake at 350° for 45 minutes. Cool in pan for 20 minutes. Invert onto cake plate and sprinkle with powdered sugar. Also good if drizzled with rum flavored confectioners glaze.Recipe categories: Desserts, Cakes, Fruit.
