  • margarine - 1 c
  • eggs - 5 item
  • flour
  • salt - 1/2 tsp
  • sugar - 2 Tbsp
  • warm water - 2 Tbsp
  • yeast - 1 pkg
  • vanilla - 1 tsp
  • lemon extract - 1 tsp
  • raisins - 1 c
  • slivered almonds - 1/2 c
  • powdered sugar - 2 Tbsp

How to make raisin cake:

Beat margarine in bowl until light and fluffy. Add eggs, one at a time, beating well. Add flour, salt and sugar. Dissolve yeast in water. Stir into dough with vanilla and lemon extract. Stir in raisins. Butter a 10-inch tube pan. Sprinkle the bottom with almonds. Turn dough into pan and let rise to almost the top of the pan. Bake at 350° for 45 minutes. Cool in pan for 20 minutes. Invert onto cake plate and sprinkle with powdered sugar. Also good if drizzled with rum flavored confectioners glaze.
