  • sugar - 1 c
  • chopped pecans - 3/4 c
  • salt - 1/2 tsp
  • flour - 2 c
  • baking powder - 2 tsp
  • egg - 1 item
  • softened butter - 2 Tbsp
  • warm water - 2 c
  • orange juice - 3/4 c
  • dried snipped apricots - 1 c

How to make apricot bread:

Soak apricots in water 30 minutes. Cream sugar, eggs and butter and add orange juice. Combine all dry ingredients. Drain apricots and add to batter. Pour into a greased and floured pan, 9 x 5 x 3-inch. Bake in 350° oven 50 minutes. Cool 10 minutes. Makes 1 loaf. Slice and spread with lite cream cheese.
