  • sugar - 1 c
  • salt - 1 tsp
  • chopped nuts - 3/4 c
  • baking powder - 2 tsp
  • baking soda - 1/2 tsp
  • egg - 1 item
  • all-purpose flour - 2 c
  • warm water - 2 c
  • orange juice - 3/4 c
  • snipped dried apricots - 1 c
  • butter or soft oleo - 2 Tbsp

How to make apricot bread:

Soak apricots in warm water for 30 minutes. Meanwhile, in a mixing bowl, cream the sugar, butter and egg. Stir in orange juice. Combine flour, baking powder, baking soda and salt. Stir into creamed mixture just until combined. Drain apricots well; add to batter with nuts. Pour into a greased 9 x 5 x 3-inch pan. Bake at 350° for 55 minutes or until bread tests done. Cool 10 minutes in pan before removing to a wire rack. Yields 1 loaf.
