Apricot bread
Ingredients/Components
- sugar - 1 c
- salt - 1 tsp
- chopped nuts - 3/4 c
- baking powder - 2 tsp
- baking soda - 1/2 tsp
- egg - 1 item
- all-purpose flour - 2 c
- warm water - 2 c
- orange juice - 3/4 c
- snipped dried apricots - 1 c
- butter or soft oleo - 2 Tbsp
How to make apricot bread:
Soak apricots in warm water for 30 minutes. Meanwhile, in a mixing bowl, cream the sugar, butter and egg. Stir in orange juice. Combine flour, baking powder, baking soda and salt. Stir into creamed mixture just until combined. Drain apricots well; add to batter with nuts. Pour into a greased 9 x 5 x 3-inch pan. Bake at 350° for 55 minutes or until bread tests done.
