Ingredients/Components
- salt - 1 tsp
- flour - 4 4
- water
- shortening
- molasses - 1/3 c
- warm water - 1/4 c
- cornmeal - 1/3 c
- yeast cake - 1 item
How to make anadama bread:
Bring water and salt to a boil and stir in cornmeal. Stir in and cool to lukewarm the molasses and shortening. Mix dough then knead. Let rise until double in bulk. Punch down. Turn into greased loaf pans. Bake at 375° for 45 minutes or until dark brown. Makes two loaves, the recipe doubles well.Origin: Legend has it that this bread was invented by a New England farmer who, tired of his daily ration of cornmeal and molasses, grabbed the porridge bowl from his patient and uninventive wife, added wheat flour and yeast and baked it on the hearth. Tasting his new discovery, he is supposed to have said, "There, Anna, dammit, this is what I like."
