Ingredients/Components

  • salt - 1 tsp
  • lemon juice - 2 tsp
  • butter, divided - 1/2 c
  • slivered almonds - 2 Tbsp
  • parsley, finely chopped - 2 tsp
  • pimiento, drained and finely chopped - 2 Tbsp

How to make almond butter sauce:

Saute the almonds slowly in 2 tablespoons of butter until golden brown. Cool. Cream the remaining butter and the almonds, pimiento, parsley, lemon juice and salt. Mix thoroughly. Serve with fried or broiled seafood.

Note: If fresh parsley is not available, 1 tablespoon of dried parsley leaves can be reconstituted in the lemon juice before adding to the butter mixture. This sauce can be stored in the refrigerator for 2 weeks.
