Zucchini sauce
Ingredients/Components
- salt and pepper - 1 item
- tomato paste - 2 Tbsp
- sliced mushrooms - 12 oz
- diced green peppers - 3 item
- large chopped onions - 2 item
- fresh oregano - 2 Tbsp
- Italian style chicken sausage - 1 lb
- medium diced zucchini - 2 item
How to make zucchini sauce:
In a skillet, poach chicken sausage in 1/4-inch of water for 15 minutes. Cut each sausage into 4 pieces and place in a large saucepan.In a microwave, cook peppers, onions, mushrooms and zucchini separately for 4 minutes in a vented container.
Combine vegetables with sausage, tomato paste, oregano, salt and pepper. Cook about 20 minutes over low heat or until zucchini is tender. Serve over cooked pasta.
