  • sugar - 2 c
  • eggs - 3 item
  • vanilla - 2 Tbsp
  • flour - 3 c
  • oil - 1 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • raisins - 1/2 c
  • nuts, chopped - 1 c
  • crushed pineapple, drained - 1 c
  • salt or less - 1 tsp
  • zucchini, peeled, grated and drained - 2 c

How to make zucchini pineapple cake:

Beat eggs until fluffy. Add sugar, vanilla, oil, zucchini, flour, baking powder, salt and soda. Stir in pineapple, raisins and nuts. Mix well. Bake in 2 well-greased loaf pans for 1 hour at 350°.

I use small aluminum size and bake about 45 minutes and make about 5 or 6 small loaves.
