Zucchini pineapple cake
Ingredients/Components
- sugar - 2 c
- eggs - 3 item
- vanilla - 2 Tbsp
- flour - 3 c
- oil - 1 c
- baking powder - 1 tsp
- baking soda - 1 tsp
- raisins - 1/2 c
- nuts, chopped - 1 c
- crushed pineapple, drained - 1 c
- salt or less - 1 tsp
- zucchini, peeled, grated and drained - 2 c
How to make zucchini pineapple cake:
Beat eggs until fluffy. Add sugar, vanilla, oil, zucchini, flour, baking powder, salt and soda. Stir in pineapple, raisins and nuts. Mix well. Bake in 2 well-greased loaf pans for 1 hour at 350°.I use small aluminum size and bake about 45 minutes and make about 5 or 6 small loaves.
