  • cinnamon
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • flour - 3 c
  • nutmeg - 3/4 tsp
  • baking powder - 1/2 tsp
  • baking soda - 2 tsp
  • raisins - 1 c
  • nuts, chopped - 1 c
  • salad oil - 1 c
  • shredded zucchini - 2 c
  • crushed pineapple, drained - 1 c

How to make zucchini pineapple bread:

Beat eggs, oil, sugar and vanilla until thick and foamy. Add zucchini and pineapple. Combine remaining ingredients and stir into first mixture, just until blended. Pour into greased and floured loaf pans. Bake at 350° for 1 hour or until pick inserted in center comes out clean. Yields 2 loaves.
