Zucchini nut bread

Ingredients/Components

• sugar
• cinnamon - 2 tsp
• eggs - 2 item
• vanilla - 2 tsp
• salt - 1 tsp
• chopped nuts - 1 c
• flour
• baking powder
• cooking oil - 2/3 c
• grated zucchini - 3 c
• wheat germ

How to make zucchini nut bread:

Mix wheat germ, flour, baking powder, cinnamon and nuts. Beat eggs until light colored and fluffy. Beat in sugar, vanilla and oil. Stir in zucchini. Gradually stir in dry ingredients. Bake at 350° in 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan for 1 hour; cool 10 minutes on rack.
