Ingredients/Components
- sugar - 2 c
- cinnamon - 1 Tbsp
- vanilla
- salt
- flour - 3 c
- eggs, beaten - 4 item
- baking powder
- baking soda
- vegetable oil
- walnuts, chopped - 1 c
- zucchini, grated - 2 c
How to make zucchini nut bread:
Sift all dry ingredients into a large bowl. Add oil, eggs, vanilla, zucchini and walnuts and mix well. Pour into 2 greased and floured loaf pans. Bake at 325° for 60 to 70 minutes. They should be golden brown (cake test with toothpick). Can make ahead, double and freeze.Hint: Can grate your summer squash and put 2 cups into a sandwich baggie and freeze. Remove and can have zucchini for your bread all year (if you use frozen zucchini, do not drain).
