  • sliced mushrooms - 1 c
  • medium onion, chopped - 1 item
  • slices bacon - 4 item
  • cubed Monterey Jack cheese - 1 c
  • zucchini, diced - 1 item
  • to 4 eggs, beaten - 3 item

How to make zucchini frittata:

Cut up bacon; cook until crisp. Add chopped onion and mushrooms; cook until tender. Cover with eggs. Cook until set, stirring occasionally. Add cheese just long enough until melted.
