Zucchini chocolate cake
Ingredients/Components
- sugar
- vanilla - 1 tsp
- flour
- cocoa - 1 Tbsp
- baking soda - 4 tsp
- vegetable oil - 1/2 c
- egg - 1 item
- shortening - 1/4 c
- margarine - 1/4 c
- orange rind - 2 tsp
- zucchini - 2 c
- sour milk* - 1/2 c
How to make zucchini chocolate cake:
*To sour milk, add 1/2 teaspoon vinegar.Cream first 4 ingredients. Add egg, vanilla and milk, mix well. Sift dry ingredients and add. Mix in zucchini last. Pour in greased and floured 9 x 13-inch or 2 (8 x 8-inch) pan. Sprinkle with chocolate chips or powdered sugar and 1/2 teaspoon cinnamon over warm cake. Bake at 325° for 45 to 50 minutes. I use 10-inch Bundt pan at 350° for 45 to 50 minutes.
