  • sugar - 2 c
  • vanilla extract - 1 Tbsp
  • salt - 1 tsp
  • chopped nuts - 1/2 c
  • flour - 2 c
  • cocoa - 1/3 c
  • eggs, beaten - 3 item
  • baking powder - 2 tsp
  • baking soda - 2 tsp
  • vegetable oil - 1/2 c
  • unsweetened chocolate - 4 oz
  • butter room temperature - 1/2 c
  • buttermilk or sour cream - 1/3 c
  • coarsely grated zucchini - 3 c

How to make zucchini chocolate cake:

Preheat oven to 350°. Melt the chocolate and oil in a saucepan over very low heat. Cream butter until light; add the sugar, eggs and vanilla. Beat well. Add melted chocolate and mix well. Sift dry ingredients and stir them into the batter with the buttermilk. Mix the zucchini and nuts into the batter.

Bake for 40 minutes or until a toothpick inserted in center comes out clean. Frost with a nice creamy white icing. Makes two 9-inch pans.

A nice way to disguise zucchini.
