  • sifted flour
  • allspice - 1/2 tsp
  • cinnamon - 1/2 tsp
  • salt - 1/2 tsp
  • soda - 2 tsp
  • cocoa - 4 Tbsp
  • sugar - 1/2 c
  • packed brown sugar - 1 c
  • butter or margarine - 1/2 c
  • oil - 1/2 c
  • eggs - 3 item
  • buttermilk - 1/2 c
  • vanilla - 1 tsp
  • grated, unpeeled zucchini - 2 c
  • semi-sweet chocolate chips - 1 c

How to make zucchini chocolate cake:

Sift together first 6 ingredients; set aside. In a large mixing bowl, cream together sugars, butter and oil. Add eggs, buttermilk and vanilla; mix well. Sift in dry ingredients; mix well. Add zucchini; stir until well blended. Pour into a greased and floured 9 x 13-inch baking pan. Sprinkle chocolate chips evenly over top. Bake at 325° for 45 minutes.
