Ingredients/Components

  • pkg - 2 oz
  • oil - 1 Tbsp
  • grated Parmesan cheese - 1/4 c
  • chopped onion - 1/2 c
  • sliced fresh mushrooms - 2 c
  • can tomato sauce - 1 oz
  • cottage cheese - 2 c
  • can tomato paste - 1 oz
  • dried oregano
  • lasagna noodles - 10 item
  • Mozzarella cheese, grated - 1 lb
  • grated raw carrots - 1 c
  • chopped, pitted ripe olives - 1/2 c

How to make vegetarian lasagna:

Boil noodles until done (approximately 8 to 10 minutes). Prepare spinach according to package directions (or simply defrost ahead of time). Saute onion in oil until soft. Add carrots and mushrooms. Cook until crisp and tender. Stir in tomato sauce, paste, olives and oregano.

Butter or grease a 13 x 9 x 2-inch casserole pan. Layer in one-half each of noodles, cottage cheese, spinach, sauce mixture and 1/3 of Mozzarella cheese. Repeat, placing remaining Mozzarella cheese on top. Sprinkle with Parmesan cheese. Bake in a 375° oven for 30 minutes. Yields 8 servings.
