Zucchini casserole
Ingredients/Components
- eggs - 3 item
- oleo - 1 Tbsp
- garlic powder - 1/2 tsp
- Parmesan cheese - 3 4
- chopped tomato - 1 item
- Italian seasoning - 2 Tbsp
- stalks celery - 2 item
- salt and pepper - 1 tsp
- Minute rice
- medium zucchini, sliced - 1 item
- large green pepper - 1 item
- large onion, chopped - 1 item
- grated Mozzarella cheese - 1/2 c
- nacho chips - 1 item
- large can mushrooms, drained - 1 item
- seasoned pork sausage
How to make zucchini casserole:
Brown sausage. Drain fat and set aside. Saute vegetables in oleo; set aside. Prepare Minute rice according to package directions. Add Italian seasoning and garlic powder to rice. Mix eggs together with Parmesan, salt and pepper. Combine sausage, zucchini, rice and egg mixture with tomato. Crush nacho chips and place in bottom of two 9-inch pie dishes. Divide mixture between dishes over chips. Sprinkle 1/2 cup grated Mozzarella cheese over each dish. Bake for 20 to 30 minutes at 350°.Recipe categories: Egg, Side dish, Casseroles.
