  • sour cream - 1 c
  • butter - 1 item
  • medium carrots, shredded - 3 item
  • medium onion, sliced - 1 item
  • can mushroom soup - 1 item
  • seasoned croutons - 1 c
  • or 5 zucchini, cut 1/4-inch slices - 4 item

How to make zucchini casserole:

Boil zucchini. Saute carrot and onion in butter until soft. Add soup and cream; add 3 cups croutons and zucchini, stirring gently. Place in greased casserole. Put remaining croutons in butter. Sprinkle on top. Bake 30 minutes at 350°.
