Zucchini casserole
Ingredients/Components
- sour cream - 1/2 c
- margarine - 6 Tbsp
- shredded carrots - 3/4 c
- chopped onion - 1/2 c
- medium zucchini, sliced 1/2-inch thick - 4 item
- herbed stuffing cubes
How to make zucchini casserole:
Cook squash in a little boiling water until tender; drain. Remove from heat. Stir in 1 1/2 cups stuffing cubes, soup, sour cream and 1/2 of butter. Gently stir in carrots and onion. Turn into 1 1/2-quart greased casserole. Melt remaining butter; add rest of the stuffing and gently toss and top casserole.
