- sour cream - 1/2 c
- butter - 6 Tbsp
- shredded carrots - 3/4 c
- chopped onion - 1/2 c
- cream of chicken soup - 1 (10
- medium zucchini, sliced 1/2-inch thick - 4 item
- herbed stuffing cubes
How to make zucchini stuffing casserole:
Cook zucchini in boiling salt water until just tender. Drain. In saucepan, melt 4 tablespoons butter. Add carrots and onion. Saute until tender. Remove from heat. Stir in 1/2 cup stuffing cubes, soup and sour cream. Gently stir in zucchini. Spoon into 1 1/2-quart casserole. Melt 2 tablespoons butter. Add remaining stuffing cubes and toss gently. Sprinkle over casserole. Bake at 350° for 30 to 40 minutes.Recipe categories: Squash, Side dish, Casseroles.
