  • cinnamon - 3 tsp
  • vanilla - 2 Tbsp
  • salt - 1/2 tsp
  • chopped nuts - 1 c
  • baking powder - 1/4 tsp
  • baking soda - 1 Tbsp
  • vegetable oil - 1 c
  • all-purpose flour - 3 c
  • firmly packed brown sugar - 1 c
  • grated zucchini - 2 c
  • white sugar - 1 c
  • large eggs, beaten - 3 item

How to make zucchini bread:

In a large bowl combine the sugars and the oil. Mix in the zucchini, vanilla, and the beaten eggs. In a separate bowl mix together the flour, salt, baking soda, baking powder, and the cinnamon. Add to the zucchini mixture, mixing well. Mix in the nuts last. Pour into two large well-greased loaf pans and bake at 325° for 1 hour. Remove from pans and cool 15 minutes on rack.
