  • grated zucchini - 3 c

How to make zucchini bread:

Combine eggs, sugar, zucchini and oil. Mix well. Add vanilla, flour, salt, soda, baking powder and cinnamon; stir until well blended. Stir in nuts, coconut and raisins. Pour into 2 lightly greased and floured 5 x 9-inch loaf pans. Bake at 325° to
