Zucchini bread
Ingredients/Components
- sugar - 2 c
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour - 3 c
- baking powder - 1/4 tsp
- baking soda - 1 tsp
- chopped nuts optional - 1 c
- cooking oil - 1 c
- raisins optional - 1/2 c
- each: cinnamon, ginger and ground cloves - 1 tsp
- shredded or grated zucchini - 2 c
How to make zucchini bread:
Preheat oven to 325°. Combine zucchini, sugar, oil, eggs and vanilla. Mix well. (I do this in the blender.) Sift together flour, baking powder, baking soda, salt and spices. Add to liquid mixture. Mix well. Add chopped nuts and raisins. Grease and flour 2 loaf pans. Bake for 1 hour. Cool for 20 minutes. Remove from pans.Recipe categories: Breads, Quick breads, Sweet.
