  • cinnamon - 3 tsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • brown sugar - 1 c
  • nutmeg - 1 tsp
  • oil - 1 c
  • baking powder - 1/4 tsp
  • baking soda - 1 tsp
  • chopped nuts optional - 1 c
  • whole wheat flour - 3 c

How to make zucchini bread:

Beat eggs until light and foamy; add oil, brown sugar, zucchini and vanilla. Sift flour, salt, baking soda, cinnamon, baking powder and nutmeg together. Add to batter with nuts and mix well. Turn into 2 greased loaf pans. Bake at 350° for 1 hour or until a tester comes out dry and clean.
