  • sugar - 2 c
  • cinnamon - 3 tsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • flour - 3 c
  • oil - 1 c
  • baking soda - 1/4 tsp
  • shredded zucchini - 2 c
  • nuts and dates optional - 1 item

How to make zucchini bread:

Combine oil, eggs, sugar and vanilla; blend well. Add dry ingredients (no need to sift); blend well. Stir in shredded zucchini (dates and nuts). Bake at 325° in greased angel food, Bundt or 2 loaf pans. Bake for 1 hour and 20 minutes or until toothpick comes clean.
