- sugar - 2 c
- cinnamon - 3 tsp
- eggs - 3 item
- vanilla - 2 tsp
- salt - 1 tsp
- flour - 3 c
- oil - 1 c
- baking soda - 1/4 tsp
- shredded zucchini - 2 c
- nuts and dates optional - 1 item
How to make zucchini bread:
Combine oil, eggs, sugar and vanilla; blend well. Add dry ingredients (no need to sift); blend well. Stir in shredded zucchini (dates and nuts). Bake at 325° in greased angel food, Bundt or 2 loaf pans. Bake for 1 hour and 20 minutes or until toothpick comes clean.Recipe categories: Breads, Quick breads, Sweet.
